I used to make a variation of this recipe for a crowd and it’s always a hit. Sweet, comforting, and just the right about of salty it’s got all the components to make dinner a little more special.
Sweet potatoes are a staple in my kitchen, mostly because they’re one of my fiance’s favorite foods. But I find they come in handy to keep on hand for a quick soup, side, or even a dip.
Not only are they high in fiber, copper, and carotenoids (or the precursors of vitamin A), but sweet potatoes are lower on the glycemic index which makes them great for people who are sensitive to carbs.
One of my favorite ways to prepare them is part of this recipe. By roasting them and letting them get nice and brown, you’ll get a little caramelization which only deepens their flavor.
The miso butter is just a simple compound butter. A little hint of fresh ginger is a great way to add warming spices right in. Compound butter is so fun to make and the variations with fresh or dried herbs, honey, or flowers are endless. Make extra to use in other meals throughout the week.
