For the last couple of weeks, there’s been one meal in particular in my rotation that I can’t seem to get enough of—Herby Chicken Meatballs with warm pita, feta, cucumbers, and anything else I’ve gone in the fridge that’s fresh and crisp.
Sometimes, I stuff everything into the pita, and other times, I use it to scoop up a yogurt sauce or pesto.
Ever since I posted my Herby Chicken Meatballs on IG, I’ve gotten a lot of requests to share the recipe, so here it is. These have become a staple in my routine, and I tend to make these at least every other week for a quick protein to warm up any time of the day.
They’re perfect throughout the seasons, and you can always swap out fresh herbs for dried herbs from summer into winter. Right now, I’ve been loving adding in some freshly chopped dill and parsley in particular.
This is such a versatile recipe, so you can’t go wrong with adding some extras. Some ideas you might want to consider are diced onion or scallions, your favorite grated cheese, chili flakes, savory spice blends, diced mushrooms, or any other aromatics you fancy.
These have also become a staple I like to make for postpartum friends of mine, and they always get such rave reviews!
