I’ve been making this dip all spring for my private clients and it’s such a hit.
It’s sort of a spin off of an herby green goddess dip, but with the added sweetness and texture of fresh green peas.
The secret ingredient here is cottage cheese. Yes, I know cottage cheese is having its moment, and while I’m not one to buy into food trend hypes, cottage cheese is holds a particular kind of childhood nostalgia.
I remember eating it from those little plastic cups for a snack and loved putting salt and pepper on top.
And while I won’t be putting cottage cheese into fruit popsicle blends (no shade if you’re into that), I will, however, be putting it in herby dips of all kinds.
It lends the perfect thickness without being too heavy.
Since fresh herbs are at their peak, feel free to use whatever you have on hand or can find at the market.
From basil and parsley to dill and mint, you really can go wrong with mix and matching your favorite herbs.
Of course you can always toss in some medicinals as well. Dried nettle, fresh lemon balm, or tulsi would all go great here.
If you need a quick appetizer or something easy to bring to a friend’s place, serve this with crackers, toasted bread, or as part of a bigger crudités spread.
And don’t forge you can always thin out an herby dip with more lemon and olive oil to make a quick dressing.
This would be a really nice dressing for a summer chicken salad with feta and white beans, just saying!
