Aaand I’m back! Whew, it’s been a full few weeks with some major updates.
First…we bought a house!!! It’s been a huge dream for me and my husband and we were lucky enough to go in on a property here in Sebastopol with one of my best friends.
More on this soon, but it really feels like a dream and I cannot wait to share more.
Second big update is that I’ve been dealing with some health issues for a while and have finally gotten answers.
If you’ve been a longtime follower of The Kosmic Kitchen, you probably know my healing journey with chronic fatigue in my early twenties was the impotece to my study of medicinal herbs and natural healing modalities.
However, after I got Covid 2 years ago, my energy has never quite felt the same. It took months to not be in bed for half of the day. Coming back from our honeymoon in Europe last summer, my energy sharply declined again.
I’ve shared a little over on IG, but since the fall I’ve had to rest in bed for most of the afternoon because I just felt so fatigued. It’s not everyday but it sure is a lot of days and it’s been a struggle to be productive and show up in the ways I need and want to in my life.
I’ve had a lot of shame around feeling so low energy, needing to put boundaries around my time and what I can truly commit to, and not being able to take on bigger projects at the moment like working on another cookbook.
With all that said, I feel lucky to have finally found a practitioner that takes me seriously and did the due diligence of pulling gut labs, gene labs, and more extensive thyroid testing.
He was able to determine pretty quickly that I have Hoshimotos thyroiditis which is an autoimmune disease affecting the thyroid. The fatigue, inflammation, brain fog, and digestive issues I’ve had since the fall are all starting to make sense with this diagnosis.
While I’m just at the beginning stages of treatment I feel really positive about getting the support I need and feeling a lot better sooner than later.
I’ve learned a ton throughout this journey so far, but more than anything I’m reminded of how important it is to advocate for your own health.
Even when your labs come back “normal” and your doctor isn’t taking your symptoms seriously enough to dig around to find out what’s really going on, there’s always another opinion.
As frustrating as this can be if you don’t give up on yourself, you will find answers.
I’ve also found my herbal kitchen practice to be such a foundational piece of my healing journey and is why I’m so passionate about sharing it with others.
Connecting with plants, cooking at home, and infusing healing herbs into my meals, not only helps me feel more grounded but helps keep me nourished.
Unsurprisingly, food will be a big part of my healing toolkit with my Hoshimotos diagnosis.
More on that as it unfolds, but I just want to say how much I appreciate you for being here, supporting my work, and taking care of yourself.
All my love,
Sarah Kate
I was diagnosed with Hashimotos almost 2 years ago. I’m so glad you were able to find a doctor who would actually listen to you. The symptoms can be so debilitating. Definitely sending you lots of love as you start this journey ❤️
Congratulations to you, hubby, and best friend on your new home. While I’ll miss your dreamy yellow kitchen so much, I can’t wait to see photos of your new place. And you’re an inspiration for advocating for your health. I have a good friend who works in healthcare, and she echoes the same message.
