Holiday food can leave you feeling heavy, sugar-filled, and out of your normal routine. After enjoying lots of company last week I needed a break from all of the rich food and decided only a radicchio salad would do.
This time of year, radicchio is something I look forward to grabbing at the farmer’s market. Crisp, bitter, and beautiful it’s a winter vegetable worth enjoying.
Raw salads aren’t my go-to in cool weather, but there’s something so refreshing about a simple plate of radicchio served with a heavy meal.
The bitter flavor helps to stimulate bile and digestive secretions, helping to move out excess dampness from the body. It also supports a healthy liver, making it easier to digest fats and heavy foods.
Think of it as a cleansing flavor, but a little can go a long way, especially in winter. That’s why leafy vegetables like radicchio or escarole can come in handy a few times a week.
