You might be noticing a trend here. Peaches are one of those special fruits you have to take advantage of during the sliver of time they’re at their peak. So, this week is another recipe with my favorite summer fruit, plus another star of the season—strawberries.
This is my go-to galette recipe. My hope is that you’ll use it for sweet and savory galettes, like this Savory Shiitake Galette I shared a few months back. This dough is pretty perfect in my opinion.
It’s simple, flakey, and everything I'm looking for in a dough. Plus, all the ingredients get pulsed in a food processor, so the most you have to do is shape and roll it out.
For the fruit, get the freshest you can find. I’m spoiled every summer with the bounty of you-pick strawberries at my CSA. It’s a fun weekly ritual getting to fill a few pint baskets with sun kissed strawberries straight from the farm.
For any fruit galette there’s a few things to keep in mind:
Let your fruit macerate - This helps pull out those sweet juices and adds even more flavor. Simply add your cut fruit to a bowl and toss with a good sprinkle of sugar and a little squeeze of citrus. Let it sit for at least 10 minutes, but the longer the better.
Keep a cold dough - Once you make the dough, pop it in the freezer so the butter gets nice and cold. This is key to helping it be flakey. You’ll want to do this one more time once the galette is filled with fruit and the edges are folded in. Basically, right before putting in the oven, add the baking tray to the freezer to help it get cold once again.
Add your herbs - A touch of freshly chopped herbs like lemon balm, mint, sweet basil, tulsi basil, or lavender can be a really nice and unexpected addition, too.
Flavor the whip cream - To make this dessert even more special, you can add a pinch of spices, like nutmeg, cinnamon, or cardamom. Another fun addition is a splash of rose water or orange blossom water. Even lemon zest or a spoonful of sour cream gives the whip a nice tang to compliment the sweetness of the galette.
The great thing about this dessert is that its delicious warm but really great at room temp. It’s perfect for taking to dinner parties or picnics and doesn’t need a lot of babying. I have a feeling you’ll love this so much you’ll want to experiment all summer long with different fruit, herb, and whip cream combos.
