Summer Salad Recipe Roundup
Time for another recipe roundup! I love looking back at all the recipes I’ve shared over the past 3 years of writing this Substack and I wanted to put some of my favorites at the top of your “to-make” list.
Simple, seasonal, and heavy on the herbs, these salads are easy to make for a weeknight dinner or for a lazy al fresco lunch on the weekend with friends.
Use these as inspiration for a salad you can make with what you have on hand and don’t be shy about swapping out ingredients here. You can always use these as ideas for shopping at the farmers market to grab the freshest seasonal staples for the week.
A few things to keep in mind to make life a little easier in the kitchen:
Make a double batch (or triple) of dressing to use throughout the week so you can save time in the kitchen, especially when it’s too hot to cook!
Toasting up a cup or more of your favorite nuts and seeds to use on your meals for extra crunch is always a nice ritual too.
Wash and store your salad greens as soon as you get them home. I know, I know, it’s a pain to do but I promise it makes the week so much easier in the kitchen.
The same goes for other fresh ingredients you’d like to use in meals. What can you wash, chop, or prep to make your meals feel more seamless?
Store your fresh herbs in a jar with water on the counter so you see them and remember to use them. You can always pop them right in the fridge this way if your kitchen tends to be on the warmer side.
